Tex-Mex-Burrito-Tacos With Rice

About once a month or so, we make Tex-Mex-Burrito-Tacos for dinner. This involves piling just about every food item that could be vaguely considered Mexican onto the dinner table, along with some tortillas, and letting each diner assemble his or her own gastronomical creation. Last night the offerings included pre-cooked carnitas, chile verde, shredded cheddar cheese, refried beans, chopped tomatoes, chopped red onions, and I can’t think of anything else. I sometimes include guacamole, but we didn’t include it last night. We started this practice because we have a thirteen-year-old very picky eater, who likes to assemble his food to his own specifications, thank you very much. Problem solved! A logical fruit smoothie for this kind of free-for-all would probably be either a peach/banana or mango/banana smoothie. Pineapple would be great if you want to go really crazy…
